Ingredients
  • 3tbsp vegetable oil
  • 6ears fresh corn on the cob
  • 1/2 green bell pepper
  • 1 medium onionyellow or white
  • 1 medium tomato
  • saltto taste
  • red pepperto taste
  • garlic powderto taste
Instructions
  1. Shuck and clean fresh corn cobs, being careful to remove corn silk. Chop onions, bell pepper, and tomatoes.
  2. In a 4 quart pot, pour oil onto the bottom of the pan. Next, layer onion. Cut kernels of corn from the cob by cutting half way down the kernel. Using the blade of your knife, “milk” or scrape any remaining corn on each cob. Pour over onions in pot. Next, layer bell peppers and then tomatoes. Season to taste using salt, red pepper and garlic powder.
  3. Cover pot and heat on medium high heat until mixture starts to give off steam. Reduce heat to medium. Allow mixture to cook for approximately 15 minutes undisturbed.
  4. Stir corn mixture and check for seasoning. Add more if needed. Cook for 5 more minutes, covered. Mixture should be slightly creamy, depending on the corn. Add a small amount of water if needed.
